![]() OCTOPUS STEW Ingredients : 1.5kg octopus 2 medium onions, finely chopprd 1 tablespoon finely chopped thyme 3 tablespoons chopped parsley 2 cloves crushed garlic Small piece of crushed ginger 2 tablespoons vegetable oil 1/2 cup dry sherry or dry white wine Can of finely chopped tomatoes. 6 cloves salt and pepper Method : Clean the octopus and remove the ink sack, your fishmonger will do this for you if you ask him nicely. Heat up a deep saucepan over high heat. Add the octopus and allow to cook in it's own juice. Move the octopus around to prevent burning, cook until throughly cooked to a pink colour. Remove octopus and allow to cool. Cut octopus into small pieces and reserve 1/2 cup of the octopus juice. Heat vegetable oil in deep saucepan. Add the onions, cloves, ginger and garlic and cook until the onions are transparent. Add the tomatoes and thyme and simmer for 15 minutes. Add the octopus juice, stir well and season to taste, simmer for another 5 minutes. Add the sherry or wine and the octopus pieces and continue to simmer until the octopus is tender. You may need to add a little water to adjust the thickness of the sauce. Add the parsley and mix well. Serve on a bed of rice with a green salad.
