Gateau Coco
Quick and easy

Ingredients :
1 cup (250 ml water
1 1/2 cups (375g) white sugar
pinch of salt
1 teaspoon of vanilla extract
1-2 drops food colouring
2 cups (125g) shredded coconut

Method :
Place the water in a medium saucepan and add the sugar and salt. Heat on a medium heat stiring until the mixture becomes syrup like.
Add the vanilla, colouring and coconut and stir until all of the syrup is absorbed.
Drop by teaspoons onto a non stick tray, allowing a 2 inch or 5cm space between each one. Allow to cool, then serve.

Seychelles Fish Curry

Serves 4
Preperation time 30 minutes
Cooking time 20-30 minutes

Ingredients :
For the Massalé
2 tablespoons corriander
2 teaspoons cumin seeds
2 teaspoons black peppercorns
1 teasoon cardamon pods
1 teaspoon cloves
small piece of cinnamon
1 teaspoon ground chili
1 teaspoon grated nutmeg
For Curry
900g/2lbs snapper or monkfish or whatever takes your fancy
2 tablespoons vegetable oil
salt and pepper
2 onions chopped
2 tablespoons massalé
1/2 tablespoon ground termeric
2 cloves garlic, chopped
small piece of ginger, chopped
3 tablespoons tamarind water
leaves from 2 sprigs of thyme
1/2 teaspoon anise
450ml/3/4 pint fish stock or water

Method :
Dry roast the whole spices until lightly coloured and set aside to cool. Grind finely and stir in the chilli and nutmeg. This can be stored for 2-3 months in an airtight jar.
Cut the fish into bite-sized pieces, season with salt and pepper, and set aside.
Heat the oil in a heavy pan and fry the onion until golden, stir in the massalé and turmeric and lightly fry. Add the pieces of fish, and all the other ingredients.
Bring to a simmer and cook for about 10 minutes until the fisk is cooked.

Serve with rice.
