![]() Bonzour de whistlin jack here your top tour guide with de interestin facts on de seychelles. yestereday we took de trip to de island of La Digue. 36. de arrival point on de island is La Passe jetty. dis is de same spot where de first settlers arrived. dese people come from de island of Reunion. 37. next to de jetty you will see a cross placed on de rocks in de bay. dis was erected in 1931 by a swiss priest named georges Fuffeieux in de memory of all those who drowned while attemping to land on de island in de past. 38. de highest point on de island is 333m 39. de population is about 100 people 40. a small amout of de copra which is de dried coconut is produced here. de copra is dried in a Kalorifer. de coconut oil is also pressed here and is used to make de cookin oil soap and de suntan lotion 41. de beach at anse source d'argent is one of de most photographed beaches in de world. it has featured in many films and magazines. here is de picture of my sister. we had to clean up de photo for de nelsoc person. ![]() SEYCHOLLOIS CHICKEN CURRY Serves 6 Preperation Time 20 minutes Cooking Time 40 minutes Easy and Exotic Ingredients : 1 medium sized chicken 3 Cloves of Garlic 2 tablespoons quatre epices ( mixture of nutmeg, cloves. ginger and pepper ) 1 tablespoon of saffron 2 tablespoons of curry powder Salt & Pepper 200g potatoes Cinnamon leaves 1 cup coconut milk 2 tablespoons of oil Ginger Glass of wine of your choice Method : Cut the chicken into small pieces. Boil up chicken, with pepper, salt and 2 tablespoons quatre epices, for 5 to 10 minutes. Peel and crush garlic, ginger and saffron. Peel potatoes and cut into quarters. Wash and dry cinnamon leaves and roughly chop. Remove chicken from heat, place in a pan with 2 tablespoons of oil, Add crushed spices, cinnamon leaves and curry powder. Stir for 5 minutes over a low heat, cover and leave to cook. Add coconut milk and potatoes, leave to simmer. Drink wine. Cook for a further 20 minutes, stirring from time to time, until fairly dry. ![]() COCONUT CHUTNEY To serve with the Chicken Curry Ingredients : Fresh coconut flesh (from half a coconut) if fresh coconut is not available use dried grated coconut 125 grams. 1 tablespoon fresh tamarind paste. Juice and skin from half a medium lemon. 1 tablespoon of vegetable oil. Salt to taste. 3-5 small green chillies. 2 tablespoons of chopped mint leaves. 2 cloves of garlic. Method : Grate the white coconut flesh taking care not to include the brown outer skin. Roast the grated coconut flesh in a heavy pan with the oil until lightly brown. Blend the roast coconut with the remaining ingredients to a fine paste. You may have to add some water to obtain a smooth paste. This will keep for a few days, covered in the fridge. ![]() CRYSTAL PRAWNS Quick and easy Ingredients : 225 g uncooked prawns, peeled and deveined. 2 egg whites. 1 tablespoon dry sherry or Chinese wine. Pinch of sugar. 1 teaspoon of salt. Pinch of pepper. 50g of cornflour. 600ml vegtable oil. 1 inch piece of fresh ginger, peeled and finely chopped. 2 spring onions or scallions, finely chopped. 25g of frozen peas, cooked and drained. 1 tablespoon of chicken stock. Few drops of sesame oil. Method : Place the praws in a bowl with the egg whites, 1 teaspoon of the sherry sugar half teaspoon salt, pepper and 40g of the cornflour. Mix together and leave for 10 minutes. Heat the oil in a wok and add the prawns and stir fry gently for about 2 minutes. Remove from oil and drain prawns on paper towel. Pour off most of the oil, leaving just enough to coat the bottom of the wok, then add the ginger and onions. Stir fry for a few seconds, then add the remaining salt, peas, sherry, pepper, chicken stock and remaining cornflour. Place the prawns back into the wok to reheat with the sauce.
