C'est que je ne la connais pas vraiment Mary. On m'a dit qu'elle a le super‐cali‐fragil‐istic‐expi‐ali‐docious, et que ça serait bien pour le Base Camp.
Et même qu'elle aurait un sac, super pratique !

Je ne connais pas Mary, mais on dirait qu'elle, elle me connaît bien ! Elle m'a dit qu'aujourd'hui c'était journée fromage, et elle a sorti toutes les spécialités françaises de son sac. Et en plus, il y a la carte des vins qui va avec. Je ne détaillerais pas pour ne pas inciter à la consommation, mais je vous laisse imaginer les associations.

Monday I went my third round with William Shakespeare:
First round I lost blushing fell asleep at 'A Midsummer Night's Dream'
Second round I lost, too blushing never found the time to read 'Romeo & Juliet'

Comme la plupart des bonnes choses, il ne faut pas en abuser (surtout que c'est gras le fromage, et je le mange à la Bretonne, donc avec du beurre, je ne te raconte pas). Mais un petit peu de temps en temps, rien que pour le plaisir que ça apporte, je suis sûr que c'est bon pour la santé.

Et j'espère bien que tu ais aimé le Roquefort que je t'avais conseillé, qu'à un moment c'était mon métier de les choisir. Avec l’entraînement, on le coupe en deux, et rien qu'en le regardant, en 3 sec on sait à qui il plaira. Alors, si on a le temps de discuter des goûts de la personne, surtout que j'ai travaillé dans presque toutes les caves.

And I hope that you liked the Roquefort that I had advised you, that at one time it was my job to choose them. With the training, it is cut in two, and just looking at it, in 3 sec we know who it will please. So, if we have time to discuss the person's tastes, especially since I worked in almost every cellar.

Si tu aimes le principe d'une journée fromage, il faut voir que sur la carte, en couleur ceux sont toutes les régions viticoles.
En France, il y a une expression : "Si il y a du fromage, du pain, et du vin, alors on peut faire un bon repas".

Mais il ne faut pas croire que les associassions géographiques sont les meilleures. Encore une fois, il faut connaître pour savoir bien choisir.

Par exemple, traditionnellement, le Maroilles, on le trempe dans du café à 10H du matin dans le nord de la France (c'est un peu spécial, mais ça se mange très bien). Lors d'un repas, comme c'est un fromage très fort en goût, je conseillerais un verre de Bordeaux ou de Merlot (il y en a de très bon au Chili et en Californie) pour accompagner.

Avec un Cantal, qui est beaucoup plus doux en bouche, j'opterais plus pour un vin de la Loire, ou un Côtes du Rhône léger. Pour le Morbier, qui est assez subtil, un Cabernet Sauvignon, etc ...

Au cas où je précise (que la modération ne se méprenne pas) : L'abus d'alcool est dangereux pour la santé, je n'en fait pas la publicité. C'est uniquement à titre informatif et surtout gustatif. Un verre de vin rouge bien choisi relève le goût d'un fromage, et le fromage va faire ressortir les arrières goûts du vin. C'est pour le plaisir des papilles. Et si mes amis du Base Camp mangent du fromage français, autant qu'ils en profitent vraiment.

But we must not believe that geographical associations are the best. Once again, one must know to know how to choose well.

Saw the Doctor earlier this week and she asked about drinking...haven't a drink in a few weeks. I remembered I had an open bottle of wine, so I had a drink last night.

Je connais moins les associations entre les fromages et les vins blanc ou rosé, mais quelques suggestions qui me semblent très bien.

Vin blanc

- Avec du Roquefort, du Bleu d'Auvergne, ou ce genre de fromages, un Sauternes ou un Gewurztraminer.
- Avec les fromages de chèvre, un Pinot Gris.
- Avec les Bries, ou même le Munster, un Châteauneuf-du-pape ou un Côtes-du-Rhône.

Vin rosé

- Avec les fromages de brebis, un rosé Corse ou un Irouleguy (un vin des Pyrénées).
- Avec les fromages de chèvre frais, un Sancerre ou un rosé du Languedoc.
- Avec du Roquefort, un rosé de Bordeaux.

Faire comme en Normandie, et boire du cidre en mangeant du Camembert.


Ceux ne sont que des suggestions, j'insiste. J'ai fait quelques recherches sur Internet pour être sûr de ne pas dire de bêtise, mais il n'y a que les fromages de chèvre avec du Pinot Gris, et les fromages de brebis avec du rosé Corse, que j'ai essayé. En général je reste sur du vin rouge avec le fromage, mais les associassions que je propose ici, je pense que ça fait de bons mariages.

A noter que je me réfère aux vins Français, que ceux sont que je connais le mieux, mais si vous connaissez des équivalents, ça devrait être aussi bon. De nos jours il y a de très bons vins qui ne viennent pas de France, le Chili, la Californie et l'Australie en font qui n'ont rien à envier aux notre. (Je préfère le champagne Argentin au Français, mais chut ! shhh )

Enfin, je ne suis pas un expert, mais si vous avez un fromage ou un vin préféré, je peux facilement trouver quel est le meilleur mariage. Il y a énormément de sites Français sur le sujet, au point qu'il y ait des contradictions de l'un à l'autre (et là, il faut avoir les connaissances de base pour faire le tri). Et puis, il y a tellement de possibilités, qu'il faut connaître un minimum les goûts pour faire des suggestions. Rien que pour le Roquefort par exemple, j'ai suggéré du rouge, du blanc et du rosé, les trois s'accordant aux préférences des gens (pour ma part, rouge ou rosé ça va, avec du blanc j'aime pas). Si vous me dites ce que vous aimez, il devient facile de trouver ce qui devrait vous plaire.

Et je conclue avec cette réflexion amusante que je me fais : Dire que je suis celui de la famille qui s'y connaît le moins au niveau culinaire.

These are just suggestions, I insist. I did some research on the Internet to be sure not to say nonsense, but there are only goat cheeses with Pinot Gris, and sheep cheeses with Corsican rosé, that I tried. In general I stay on red wine with cheese, but associassions that I propose here, I think it makes good marriages.

Note that I refer to French wines, that those are the ones I know best, but if you know equivalents, it should be as good. Nowadays there are very good wines that do not come from France, Chile, California and Australia make them that have nothing to envy to ours. (I prefer Argentinian champagne to French, but shhh! shhh )

Lastly, I am not an expert, but if you have a favorite cheese or wine, I can easily find what is the best wedding. There are a lot of French sites on the subject, to the point that there are contradictions from one to the other (and there, we must have the basic knowledge to sort). And then, there are so many possibilities, that you have to know a minimum the tastes to make suggestions. Just for Roquefort for example, I suggested red, white and rosé, the three agreeing to the preferences of people (for me, red or rosé it goes, with white I do not like). If you tell me what you like, it becomes easy to find what you should like.

And I conclude with this amusing reflection that I make myself: Say that I'm the one of the family who knows the least about cooking.
