Sorry if I missed it...How do I configure WCG/BOINC so I get the new GPU tasks for OpenPandemics and still get CPU task for other projects like ARP1 but DON'T get CPU task for OPN1? I switched CPU to "no" and it seems to shut all CPU task off. That doesn't work for me as I have several high CPU core count machines I need to get task for while only getting GPU task for OpenPandemics. Any ideas?

There is no official way to disable OPN CPU tasks and get GPU tasks only.

Install another instance of BOINC to a different folder and run 2 clients at the same time. 2. Use a VM to run a second BOINC client.

I can see how VMs would work as you could have different machine names and thus device profiles (one with CPU/projects you want and one set to no CPU getting Covid only) but how would I make two instances work being it would still be the same machine id and thus the same device profile? Thanks! Move the CPU work to a different profile on the 2nd instance of the client and set allow CPU work to yes and GPU work to no. Use the GPU profile on the original client set to receive no CPU work. I think this should work but I've never tried it.
