What are the activities done when we Publish a stream?

My question is From a node when we create & publish a stream, is other node stores the stream data even if they are not subscribed to the same.

If they are not storing until they subscribe then what is the need of encryption & publishing the key? The node would grant the permission to the desired node who are willing to subscribe the same.

Yes, every node stores the stream data (unless you are using off-chain stream items in MultiChain 2.0 alpha 3, in which case every node only stores hashes of the stream data). Subscribing to a stream means indexing it in many ways in real time for retrieval.
