I need a quick and healthy dinner idea, please.
My sisters and my niece are coming over on Thursday to make cards. I'll have about 15 minutes from the time I get home from work until they arrive.
One of my sisters just started doing weight watchers again and I'm trying to eat healthy too.
I'd like to make something ahead that I can pop in the oven or put in the crockpot in the morning, a one dish type of meal.
Anyone have any ideas or "go-to" recipes that you use? Even if it's not that healthy I could maybe adjust some ingredients... quick and easy is the real focus here.

Tacos are my go to quick meal. You can pre do everything and then just heat and eat Have a wonderful time!

tater tot stew is quick, easy, delicious
If you buy a package of the frozen stew veggies at the market, even faster.
brown hamburger (or turkey burger) in a can of beef bouillion crumbling as you brown it. Stir in a can of cream of mushroom soup and the stew veggies. Put a lid on that and put in hot oven (about 425 degrees) until veggies are cooked - maybe 12-15 minutes. Remove the lid and cover the stew with mini tater tots. cook uncovered until tater tots are done about another 15 minutes per package instructions.
If you do your own veggies, carrots, celery, and potatoes peeled and cut into bite size pieces. The smaller the pieces, the quicker they cook.

1 can of Rotel (diced tomatoes with chilis)
1 can of corn
3 medium chicken breasts
4 cups of chicken broth
1 can of black beans (drained)
2 tbsp of cumin
1 tsp of chipotle powder
1 tbsp of garlic powder or granules
1 tbsp of onion powder
The night before....
add chicken breasts to slow cooker with water and cook on low until morning.
Morning:
Drain and shred chicken then put shredded chicken in crock.
Add beans, Rotel, and corn and spices to taste (I used the measurements based on my taste)
Add chicken broth.
Stir
Set crock on low and cook for 8 hours or more...

A family favorite for us lately has been chicken tacos. I put boneless chicken breasts in the crock pot with a little taco seasoning and cover them with salsa, it's perfect for shredded chicken tacos. After a busy day it's so easy to shred the chicken and get out all the fixin's, easy peasy yummy dinner

A favorite at my house is grilling chicken marinated with Italian dressing. Now add it to your favorite salad items. This time of the year I also had strawberries and blueberries. Sounds like a good dinner around here tonight:)

TAMALE PIE 1 lb Hamburger 1 Onion - diced 1 pkg Taco Seasoning mix 1 tsp. Worcestershire Sauce 1/4 cup of ketchup 1 can tomatoes 1 can of ranch style beans drained 1 can whole kernel corn drained. Jiffy Cornbread Cook hamburger and onion in bean pot in microwave for 7 minutes Drain and add: Taco seasoning mix, Worcestershire, ketchup, tomatoes, beans and corn. Bake in oven at 350 with lid on for about 30 to 45 min. Prepare 1 box of Jiffy cornbread and pour over top of mixture. Bake at 400 with lid off until cornbread is done
I have a bean pot so we cook it in there and just warm it up whenever we want it. YUM!
