LOL! That recipe was posted a year ago ;) Someone tried it and commented on it recently. Hope it works out for you! I was literally just putting it together also for tonight when I realized I did not have enough chicken. UGH! Now to hunt for plan B.....

Since it is cool here today. I'm making chicken tortilla soup tonite.

Cooked & Shredded half a chicken or less
2 cans of chicken broth
2 cans diced tomatoes
1 can white corn, drained
1 can black beans
1 can green chilis
1 pkg of taco seasoning
1 can of cream of mushroom soup
1 can white beans

Throw it all in crock pot on low for 6 hours or on high for 3 hours! Serve it with sour cream, tortilla chips and shredded cheddar cheese. Yummy!!!

I cooked a large pack of boneless chicken breast last week in my crockpot. Just chopped some onion and put it on the bottom. Added the breast seasonsed with salt, pepper, garlic. No water. I had a rich broth to use and lots chicken to use in various dishes. So tender and tasty, ready to cover with a sauce, cook with rice, make a salad, enchiladas to name a few. Worked great.

That sounds so yummy!!!! Have to try it when Larry brings Crock Pot back to house from ranch!
