My favorite way is the recipe I posted in this forum for "Gail's Crockpot Chicken."

I am making the chicken ernstem/beth posted on Sat! sounds so good and we have cooler temps coming so I think this will be PERFECT!!!

LOL! That recipe was posted a year ago Someone tried it and commented on it recently. Hope it works out for you! I was literally just putting it together also for tonight when I realized I did not have enough chicken. UGH! Since it is cool here today. I'm making chicken tortilla soup tonite.
Cooked & Shredded half a chicken or less
2 cans of chicken broth
2 cans diced tomatoes
1 can white corn, drained
1 can black beans
1 can green chilis
1 pkg of taco seasoning
1 can of cream of mushroom soup
1 can white beans
Throw it all in crock pot on low for 6 hours or on high for 3 hours! Serve it with sour cream, tortilla chips and shredded cheddar cheese. Yummy!!!

I cooked a large pack of boneless chicken breast last week in my crockpot. Just chopped some onion and put it on the bottom. Added the breast seasonsed with salt, pepper, garlic. No water. I had a rich broth to use and lots chicken to use in various dishes. So tender and tasty, ready to cover with a sauce, cook with rice, make a salad, enchiladas to name a few. Worked great.
