Need ideas/recipes
I want to have a few neighbors in for a coffee before Christmas. A morning thing: 9-10a time frame.

I'd like to keep it simple - coffee and tea, juice and finger foods such as banana nut muffins, cranberry bread,

I'd like another 2-3 things that can be laid out, picked up and eaten with fingers. I don't want folks to have to deal with forks, knives, etc.

I can put out grapes (red and green)

No cookies (Aren't people overdosed on cookies at Christmas anyway?)

Any other ideas - with recipes.

I just want folks to come in and not fuss with utensils, visit and relax.

Re: Need ideas/recipes
I have a great recipe for gluten free muffins (made w/almond flour) or "Paleo" fudge (no sugar..use honey or maple syrup instead).

I've got to pull out my biscotti recipe soon too and make it for Josh..along with my peppermint cookies.

Re: Need ideas/recipes
Sausage balls

1 pound sausage

2 cups shredded cheddar cheese

3 cups Bisquick

Mix together and roll out into walnut size balls.

Bake @ 350 for 20-25 minutes.

(I use maple sausage and it gives it a sweet/spicy flavor!)

Ham Rolls

1 package of Kings Hawaiian sweet rolls

1 lb deli ham ( I prefer to get mine chipped or shaved)

1/2 - 3/4lb thin sliced Provolone or Swiss cheese

2 Tbsp prepared mustard or honey mustard

1 Tbsp poppy seed

1 tsp Worcestershire sauce

2 Tbsp finely minced onion ( optional)

1/2 cup butter

Melt butter. Add mustard, poppy seed, Worcestershire sauce and onion. Cook over low heat until onions are transparent. If not using onions, cook over low heat for 3-4 minutes. Slice rolls horizontally and spread mixture evenly on both sides. Fill with ham and cheese. Bake on cookie sheet @ 375 for about 15 minutes or until cheese is melted.

Maybe some spreads like a cream cheese type for the breads. I enjoy bagels and those mini ones are nice size for such as this.

Ham rollups

Take a tortilla, spread cream cheese on it, sprinkle some chopped green chilis and top with ham. Roll up and slice, put a toothpick in each slice and serve with salsa.

Re: Need ideas/recipes
Kielbasa kabobs wooden skewers
2 rings cooked kielbasa sausage (smoked sausage)

1/4 cup apricot preserves

2 TBS. orange juice

If using bamboo skewers, soak in water at least 30 minutes. Heat oven to 350. Line cookie sheet with foil, spray with PAM.

Cut sausage on an angle into 48 chunks, 1 inch long. On each skewer, thread 4 chunks of sausage. Place on cookie sheet.

In small bowl, mix preserves and juice with fork. brush glaze over kabobs, turn and brush other side.

Bake uncovered about 45 minutes or until sausage is browned.

I skipped the skewers and just put the chunks on the cookie sheet and brushed both sides. Serve on a platter with toothpicks. This is very good for a brunch.

These sausage balls are really good and easy to make. Never had the ham rolls but they sound yummy, too. Personally, I would want more fresh fruit if possible....maybe some melon balls (or just chunks), pineapple, and strawberries.

Re: Need ideas/recipes
Perhaps I could introduce you to a New Zealand / Australian / English tradition for the festive season? Christmas (fruit) mince pies. A plate of these are always served when guests visit around the holidays, either with tea or coffee or with a wee drop of the "other stuff"! LOL

I always remember my mother making the sweet pastry for these little pies and the fruit mince. For those who made their own mince (rather than buy the ready made pies) there was a great competition around whose recipe was the best.

It was such a tradition that it makes me a little teary just thinking about it... my mother making this with my grandmother "advising". Our family always celebrated a rather untraditional Christmas but we could never NOT have these!

If anyone is interested please PM me and I will dig out my great grandmother's recipe for the mince and send it on. Otherwise here is a quick link to "Aunty Alison's" recipe. Alison Holst is an iconic cook in our country and she is "tried and true"!

We make the Bisquick sausage biscuits too, though I prefer less cheese and a bit of water so they're not so dry. (And to clarify, you do need to cook, drain & crumble the sausage first before mixing w/other ingredients :) ). I'm taking these to church Christmas breakfast next week!

Really? We've never cooked the sausage first... Always just bake it in the oven.

Re: Need ideas/recipes

These are always a favorite, easy to make and taste yummy. You can substitute cheddar cheese.

Check www.thepioneerwoman.com

she has some amzaing recipes.

Ingredients

  • 1 package
    Club Crackers

  • 1 pound
Thin Sliced Bacon (or More Depending On Number Of Crackers)

  • Grated Parmesan Cheese

  • Optional Alternative: Brown Sugar Instead Of Parmesan Cheese

    Preparation Instructions

Lay crackers (as many as you want) face up on a cookie sheet.
Scoop about 1 teaspoon of grated Parmesan cheese onto each cracker. Cut your package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.
Place the bacon wrapped crackers onto a baking sheet that has a rack on it.
Place in a 250-degree oven for about 2 hours.

The recipe on the bisquic box has you mix the uncooked sausage with the bisquic and cheese using a dash of water to help moisten and bind to roll into balls about the size of a quarter to bake. These are yummy, easy to fix, and keep a bag in the freezer to have with breakfast. Serve with some maple syrup.

Re: Need ideas/recipes
Oh by the way, is this before or after Christmas, will I be there yet? :-D :winkb: I can help make the sausage balls.

Another treat I like to make ahead of time and put in the freezer. Prepare a half pound of ground chuck and half pound of sausage, drain well and add velveeta cheese to meat and melt. Enough cheese to hold the mixture together, a dash or two of Worcestershire sauce, dash of galic powder. Spread a spoonful on dark mini rye bread and place on a cookie sheet. Put in a 350 degree oven for about 10 minutes. Or prepare and place in a container and freeze to later bake and serve.
