I'm definitely almost six months late. My favorite recipe for using backstrap of deer is my beef stroganof recipe from the Joy of Cooking. I'm sure it would be no different in using elk meat. Another great use of Elk meat is in jerky and one can find loads of recipes on the web. I've also had elk sticks just like beef sticks and are really really good. Jerky is the easier to make if your considering sticks because you need a casing with sticks.
