I usually whip this up for snacks when we are having folks over to watch football (and it's lowfat!):1 can whole kernel sweet corn (drained)1 can black beans (drained and rinsed)1 can Ro-Tel chopped tomatoes and chilis2 green onions (chopped)1 pkg. Taco seasoning mix2 Tbsp. lime juice3 Tbsp. olive oilMix all ingredients together in a bowl and chill to let flavors blend for about an hour. Stir before serving.Serve with corn chips (my favorite are the Baked Tostitos scoops...they hold it well, and are less fat than regular chips.)
