I got 2 sacks full of fresh spinach right from the farmer. I rinsed it really well but now don't know what to do with it. Can I freeze it as is? Wha-da-ya-think?

Yuck! Cooked spinach! LOL! I would make a spinach salad and eat it uncooked. But that's just me. You can't freeze it without cooking it....it will wilt badly.

You can also add it fresh to chicken soup - it's great! And I saute it with a lot of stir frys and mix it with other vegetables and with rice.
Fresh spinach (uncooked) with fresh mozarella cheese, tomotoes, penne pasta noodles, salt, pepper and olive oil.yumm, made that for dinner one night. so good!

I'd make some spinach potato and sausage soup! ( like at Olive Garden )Really yummy in lasaga if you want to cook and freeze it then use it laterI also like it in fresh salads

Two bags won't be much after it's cooked. You may as well use it up.I can eat a mess of it sauteed with a little olive oil and garlic, like Theresa!

2 bags really won't be much. I would cook it with some bacon grease(yummy) and top it with a little vinegar.

I like it fresh - we use spinach instead of lettuce in salad (although it's usually the bagged sort). My favorite salad is fresh spinach, grilled chicken (seasoned with rub), peas, corn, shredded cheese, and ranch dressing - easy & yummy!

Fresh spinach is the BEST for salads! You can't beat the vitamins and LOW CALORIES.FOUR cups of raw spinach has only about 20 calories.TONS of vitamin A, K and C.I always keep a big bag or two of it in the frige!
Throw about 4 cups of it (give or take) into a food processer, add 1 cucumber, an apple or 2, a little parsley, some celery & ginger & mix 'er all up. You have just made a spinach smoothie. Yum. (Not quite as yummy as say- a fruit smoothie, but still yum.)
