I have it selected to show under options, but it is completely missing from all projects.

You give little information so we'll have to guess from context. I assume that by dashboard you mean the Projects tab in BOINC Manager's Advanced View. Now given that Status is the rightmost column could it just be off the visible area?

In BOINC manager try: options/select columns and see if status is selected OR just select defaults.
