I updated 1 of my computers to the latest version. I keep seeing "Project requested delay of 121 seconds" every time it requests WU's. Why is this?

Always been there, maybe not printed because of log flag selections, but it's there to stop you from hammering the server and start a little DDOS on your own. A server connect is actually quite DB intense, checking the work already assigned, finding any new work per your profile etc.
