I thought it was only my family who said it until a Dean at my College,
half way across the US, greeted me that way.

The variation is interesting.
The fact that so many people say it keeps surprising and delighting me.

It is not nessarily variation - "white rabbits" is a greeting for the first day of the month but "rabbit, rabbit" is the same as the American "jaw, jaw" or the Irish "Blarney, Blarney."

Rabbit is Cockney Rhyming Slang

Rabbit and Pork is slang for Talk.

Usage example
"She would not stop rabbitting!"
