I'm a complete goober when it comes to holidays. I really get into all holidays HARD. Thankfully, my family puts up with me and my antics!
For lunch today, I'm making Pumpkin Pizza Pockets! They are so cute and really easy if you ever need a really silly lunch/snack idea.
All you need is pizza crust (refrigerated or home made) and pizza fixings! I roll out my pizza dough and use my large pumpkin cookie cutter to cut out one pumpkin. (You could freehand it as well.) I put that pumpkin on a baking sheet and top it with sauce, cheese, pepperoni, ham, green peppers . . . anything you want. Then, I cut another pumpkin from the cutter. On the second pumpkin I use a steak knife to cut out little eyes, nose, and mouth. Then I put that pumpkin on top of the first one and use a fork to press the edges. I make as many as I can, then I throw them in the oven! At what temp and for how long depends on your dough -- just use those directions as a starting point.
Perfect little Halloween snacks!

My girls would love these! They always ask for a pumpkin pizza and all I could think of is a large pumpkin shaped pizza with pepperoni eyes, mouth and nose. I have to slice it and don't see the fun in that. I'll have try these next time!
