Ever cooked a Hubbard Squash?
What the heck do I do with this monstrous squash? I love butternut, acorn and zucchini but I have never cooked one of these. Any tried and true recipes, DH brought home 3 of them.

What I do now with these kinds of squashes is I split them take out the seeds coat a baking sheet with pam and bake at 350 - 400 flesh side down until skin is easily pierced - take it out of the oven - scoop out the squash and mash it up with a little butter - you can add other things that recipes call for - maple - nuts etc, this bets trying to cut and peel those buggers!

This is what it looks like, I read that its almost too big to cut in half so put it in a bag and throw it on the ground to split it. Scoop out the seeds and bake. I want some recipes to try this out on. I love butternut so I think I will try cooking it like I do a butternut squash.

I have never tried to cook one...it's definetly not one of the prettiest squashes is it lol

They are yummy.

We had a hatchet that we used to use to cut it open. Scoop out the seeds and put it on a cooking sheet (skin side down after you've rinsed it off) too cook. Scrape off the skin and finish cooking in the microwave with salt, pepper, a bit of butter and MAPLE SYRUP (or brown sugar) I like to toss in some walnuts too.

It may be ugly, it may be huge but it was yummy! I took it outside in a plastic bag, threw it on the ground and it split perfectly down the middle. I baked it for 20 minutes, took one half out and peeled it. The other half stayed in the oven with butter and brown sugar. The half I peeled, I cubed it, threw it in a saute pan with browned butter. I let it cook until it was tender and browned, added a little chicken stock and some brown sugar and let it carmelize. OMG! It was heavenly. The half in the oven tasted a bit like acorn squash. Between the 3 of us and DH taking leftovers for lunch, its gone! THe next one I am going try making a soup out of it.
