Turkey Salad with left over turkey

1 1/2 pound of turkey
3/4 cup mayo
1/3 cup Dijon mustard
1/4 cup sweet pickle chopped
1/2 of a small onion chopped
small parsley chopped
salt and pepper to taste.

Mix well, put on bun of choice and top with lettuce.

i have to admit i despise turkey lol!  so odd because as a child i LOVED it and smelling it all day before we ate was just torture!  now the smell makes me  :sick: and i can't eat it at all.

so i would love to participate but yeah lol

Every year I cook 2 Thanksgiving dinners. One at Canadian Thanksgiving, one at American Thanksgiving. And as tradition has it I still stuff my birds! They are always tender and moist. My pan holds around a 20 pound bird. So that is what I try to get. Love all the left overs. And share the leftovers with DD and her crew. Making turkey noodle soup, turkey noodle casserole and turkey pot pie.

Turkey Recipes
Pilgrim Sandwich
Any type of sub roll
Left over turkey meat sliced
layer of stuffing (mine is cornbread stuffing)
Gruyere cheese and heated to melt
and then topped with cranberry whole berry sauce (more flavor than the jelly)

Alternative Sandwich
Any Bread
Layer of turkey
Miracle Whip Salad dressing spread on bread
Layer of Simply Pickles Bread & Butter chips
Yummy ultra sweet sub

And we eat through it all by Friday night!!

We love turkey but we keep it simple:

I start with a turkey that's at least 12 lbs.
I tuck butter into every space, crevice and orafice that a pat of butter can fit.
Salt, pepper, onion powder and a lot of garlic powder.
Place in the roaster for 3-4 hours.  
sometimes I add stuffing - it depends on the hubby making it or not.  It's his Mom's recipe and he says I never make it right....lol.

Easy peasy - leftovers are shredded and made into turkey soup in the crockpot:

4 cups of broth
1 teaspoon of garlic
salt and pepper to taste
celery
carrots
add shredded turkey

Cook on low for 2-3 hours.

YUM!!!!

I love a good turkey manhattan after Thanksgiving.  Very simple to make using your leftovers.

Ingredients:

Leftover turkey
Mashed potatoes
Gravy 
slices of white bread.

Place bread on plate.  Then layer the mashed potatoes (either on bread or between the slices).  Add turkey next and smother all in gravy.  A quick and easy way to use the leftovers.

Not exactly a recipe so I don't know if this counts.  Other than stuffing the turkey with my special recipe I like my meat to be seasoned as much as the skin.  So I pull the skin away from the meat by slipping my hand in between the meat and skin and I put pats of butter all over in there.  Makes the meat more moist and tasty!
