Tasty Watermelon Salad

This one is so easy and so refreshing!
Ingredients:
Watermelon (about 4 cups cut into small chunks)
Basil (5 or 6 leaves cut into thin ribbons)
Feta cheese (1/2 cup)
Balsamic Glaze (I have a bottle of this in the cabinet....amazing!)
Stir in the basil and feta cheese with the watermelon pieces. Then, just before serving, drizzle with balsamic glaze.
That's it!

Sounds awesome! And I'm a huge Feta Cheese fan!! (AND watermelon)

That's sounds yummy. Will have to try it.
One of our favorite recipes for hot days and as a side dish for barbecues is Cowboy Caviar. I actually read about this recipe in a book I was reading. It sounded good so I decided to look it up and make it. Yep, so good.
1 can black beans drained
1 can sweet corn
1 chopped jalapeno pepper
1/3 cup chopped cilantro
3/4 cup chopped red onion
2 diced avocados
Dressing
1/4 cup lime juice
2 tbsp red wine vinegar
Salt and Pepper to taste
1/4 tsp chili powder
Combine the dressing ingredients and set aside.
Combine all the other ingredients in a bowl.
Top with the dressing and chill until ready to serve.

I make this often, but I use mint instead of basil. 10/10. Yummmmm

I don’t like feta

but the salad sounds so refreshing. Do you think it would work with goat cheese?

I do think it would work! The feta adds a little salt, so you might want to sprinkle some on to enhance the watermelon flavor, but goat cheese would be just as yummy, I think!

I'll have to try that, too. My herbs are going crazy right now. Trying to find ways to use them fresh!

Yes! I have made something similar, but it has a slightly different dressing and a can of chopped tomatoes instead of the avocado. Great with tortilla chips!
