Thought I had posted this one, but it was another one. This one is super easy!

1 can of white breast chicken meat (or part of a rotisserie chicken)
2-3 cups of chopped Romaine lettuce
1/2 cup of grated parmesan
1/4 cup of Caesar Salad dressing
1/2 cup of croutons (more if you like crunch)
flour tortillas
chopped tomatoes (optional)

Drain the chicken and mix with the parmesan and lettuce. Stir in the caesar salad dressing. Salt and pepper to taste. Add croutons and tomatoes and fill the tortillas. Roll and secure with toothpicks.

Sounds great.  I am a picky eater, and I like ALL the ingredients in this wrap.  And I hope my Diabetes will like it too.

I see this us an old post but what a great summer recipe. Definitely going to try this.

DH is a diabetic as well. We buy him Ole Xtreme Wellness High Fiber tortillas.

Laura, I made it and it is delicious!  and SOOO easy!  

Everyone else loved it, too.

I ate this without the tortillas...just as a chicken salad, and it was perfect!
