Monterey Chicken

This is a copycat recipe from one at Applebee's.

4 chicken breasts
1 cup teriyaki marinade

Marinade the chicken breasts in the 3/4 of the teriyaki marinade for 1 to 2 hours in the fridge.

1/2 stick of butter
1 cup of chopped mushrooms
1 green bell pepper, chopped
2-3 scallions chopped
1/2 cup of shredded mozzarella or Monterey Jack cheese
4 slices of bacon, cooked until almost crispy

Melt 1/2 stick of butter in a pan. Sauté the mushrooms, bell pepper and scallions in the butter for 3-5 minutes. Stir in the remaining 1/4 cup of teriyaki sauce. Place chicken in a greased ovenproof pan and bake at 350 degrees for 20-30 minutes, until juices run clear. Top with vegetable mixture. Break up bacon and layer on top, then cover with cheese. Bake for 10 more minutes until cheese is melted and serve.

Yes, this is one of dh's faves.  My biggest issue is remembering to marinate the chicken ahead of time. lol  I have served it without marinating it and just poured on the teriyaki sauce, but it isn't as juicy.  (Also, I get the low sodium teriyaki sauce, because that stuff is salty and with the bacon it is just too much. :) )
