Cider Donut Muffins
These sound yummy.  Wondering if you could just use apple juice or if it would change the taste.  Think I will try a 1/2 recipe this week.  It has been pretty cold in the mornings and hot muffins would be very good for breakfast.

For The Muffins:

Ingredients:
  • 2 cups sweet apple cider
  • 1/2 cup unsalted butter, softened, plus more for pan
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1-1/2 teaspoons vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1-1/4 teaspoons ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon table salt
Instructions:Preheat your oven to 375° and set a rack to the middle position. Lightly grease a standard 12-cup muffin pan and set aside.

Put the apple cider in a large saucepan over high heat and bring to a boil. Reduce the heat slightly and simmer until the liquid is reduced to 1 cup. Set aside to cool.

Using a standing or handheld mixer, cream the butter with the sugar in a large bowl at medium speed until fluffy, about 4 minutes. Add the eggs, one at a time, blending well after each. Add the vanilla extract and blend.

In a medium-size bowl, whisk together the flour, nutmeg, baking powder, baking soda, and salt. Add a third of this mixture to the butter mixture and beat just to combine. Add half the reduced cider and beat to combine. Repeat with another third of the flour mixture, then the rest of the cider, then the remaining flour mixture. Divide the batter evenly among the prepared muffin cups and transfer to the oven. Bake until tops are firm and a tester inserted into the center comes out clean, 15 to 17 minutes. Remove from the oven and let cool 10 minutes.For the topping:Ingredients:
  • 3/4 cup granulated sugar
  • 3 tablespoons ground cinnamon
  • 4 tablespoons salted butter, melted
Instructions:Now, prepare the topping: In a medium-size bowl, whisk together the sugar and cinnamon. As soon as the muffins are cool enough to handle, brush their tops and sides with butter, then roll in the cinnamon sugar to coat. Serve warm or at room temperature.

I just had one last week. My daughter went apple picking and there were cider donuts for sale. It was yummy...good luck on the recipe.

I think apple juice would be too weak. But I love the richness of cider. We are headed out to the cider mill today, the donuts are my favorite.

No cider mills here (I sure miss Connecticut), but the recipe sounds delicious, and our grocery store carries cider.

I noticed salted and unsalted butter is called for.  Do you think I could use the same for the muffin and the topping?  hmm, I always use margerine anyhow, I wonder if THAT will make a difference...??

i find there is always a big difference between butter and margerine.  I never cook with or even eat margerine.  But then I am old(er) and it might be a personal thing.  Oh and I seldom bother with buying unsalted butter for recipes.

I always bake with butter too...a richer, more moist flavoring. I never buy unsalted butter though...the tiny bit of salt in the butter I feel just makes it all taste better.

As for "sweet cider"? I live in a very strong area of apple growers, with cider abundant, but I've never heard of sweet cider. Cider is just pressed apples, essentially. What the heck is sweet cider? I would think apple juice would work as well, as it's simply more purified than apple cider, but the apple taste can be milder. You may not have as strong of an apple flavor. But I definitely will try this!

sweet cider -----Apple cider (also called sweet cider or soft cider) is the name used in the United States and parts of Canada for an unfiltered, unsweetened, non-alcoholic beverage .

so I guess they dont want us to use hard cider which is alcoholic!

Yum! Those sound so good. we just bought some apple cider on Friday. If I can get to the apple cider before DH drinks it all I'll make some.
