I love this recipe on a hot day! No cooking!
4 large tortillas (I love the Tomato Basil Pesto ones with this recipe)
Fresh spinach (I use the baby spinach for this)
1 Granny Smith or other tart apple, cored and sliced
6 oz. crumbled gorgonzola (or other blue cheese)
1/4 cup of toasted walnut pieces (I toast them on a cookie sheet ahead of time, but you can also put them in untoasted)
Cut up chicken breast (recipe works well with leftover grilled or baked chicken, or you can use the canned and drain it well)
Put the tortillas between two paper towels and microwave for 30 seconds so they will get softer. Spread a small amount of Miracle whip or mayo on the tortillas if you like. Layer the other ingredients in the center of the tortillas and roll up! That is it! Healthy and delicious.

Laura it sounds so good!!! I think I will pop the single huge chicken breast in the oven right now and when it's done I'll run to the grocery store to make Larry and I some tortillas tonight!!!

Chicken Breast is done and in fridge.....of to the store I go as soon as phone charges another 30 minutes!

oooo.....Laura this was so yummy!! Larry had eaten on the way home. Monday I felt like crap. Tuesday James ate the chicken. I find two other breasts in freezer that turned out to be three. I run to the store to get everything to make the Wraps.
This is what went in ours:
James seasoned the breasts and popped them in the oven. I know he used garlic powder, sage, parmesian cheese....and as far as I could tell a host of other things...too.
And in the salad portion went the following:

1/3 package alfalfa sprouts
3 green onions
1 cucumber diced
2 tomatos diced
2 sprigs cilantro leaves chopped (Kim took three more sprigs of leaves just for her)
1 fuji apple (Larry's not into tart apples except in my Mom's incredible apple pie)
juice of half a lemon
James and I chose blue cheese dressing, Larry chose Thousand Island.
Skeptical about a flour tortilla, spinach salad with chicken and salad dressing?????? James somewhat skeptical, but he'll try anything. He makes one......then James and I make ours. Total silence coming from living room. Not a peep out of Larry. 'Good?', I asked. 'Um hmmm,' replied Larry with mouth full. He's back for two more as James and I finished up making our two. I finished at two, Larry and James at three each.
In the midst of wrap #2 He said, 'Best taco I've ever had!' I laughed at Larry when he asked what they were called. 'How about Sassy Chicken Taco!'

I am bringing this one back to the top, because it is perfect for hot, summer days. Also, you can use some of your spinach and walnuts, if you got them for the other 2 recipes I just posted.

my dumb walmart had next to none of the ingredients for these i was mad...i will try our local store this coming week
