swedish spritz cookies (for deerewife)
Jenna....here it is:
Rewritten from the recipe in the Better Homes and Gardens' New Cook Book, published 1989. It's the same recipe that my mom has used since the '50s.


Spritz

1 and 1/2 c butter

3 and 1/2 c all purpose flour

1 c sugar

1 egg

1 tsp baking powder

1 tsp vanilla

1/2 tsp almond extract (a must!!)



Beat butter on Med. to High for 30 seconds. Add 1 cup of the flour and all the other ingredients. Blend until combined. Beat in the rest of the flour. I color 1/2 the mix w/ green food coloring and the other 1/2 w/ red. Force the unchilled dough through the cookie press onto an ungreased cookie sheet. Don't use a non-stick or a dark c. sheet. Bake at 375 for 8 - 10 minutes or until edges are firm but not brown. Cool on a wire rack. You can sprinkle with colored sugar if you wish when they first come out of the oven.

You can drop them on a cookie sheet if you don't have a cookie press, but the shapes really make them special.
