I have a habit of sometimes getting in the kitchen and as I put it I put everything but the kitchen sink in a dish.

Open Face Chicken Salad Sandwich
Choose favorite bread
2 Large Chicken Breasts
1 Red Onion Slice or a Sweet Onion (1015 or Vidalia)
1 1/2 stalks celery (I prefer the inner stalks for this type of sandwich due to milder flavor)
5-6 Baby Carrots
12-16 Grape or Cherry Tomatoes
Olive Oil
1 cup Mayonaise
1/4 cup Durkee's Famous Sandwich & Salad Sauce
2 Tblsp Prepared Mustard
1/4 tsp garlic
1/2 tsp basil
1/4 tsp tarragon
Preheat oven to 350 degrees. Mix Mayo, Durkee's, mustard and herbs and put in fridge to blend flavors. Brown Chicken Breasts in Olive Oil over medium high heat then place in baking dish and cook 40 minutes at 350 degree oven. Dice Onion, celery and carrots add to medium mixing bowl. Quarter Cherry Tomatoes or Halve Grape Tomatos and set aside. When Chicken Breasts are done chop in bite size pieces. Add to mixing bowl. Add Mayonaise Sauce, toss until blended with vegatables. Serve on one slice of favorite bread.
Lynn made me feel good, with her first bite as she was watching "Top Chef." Mom you have them beat!
