This was really good. We have eaten it as a burrito filling and with chips to dip with.
1 pound hamburger
1 box spanish rice-a-roni
1 cup water
1 can diced tomatoes
1 sm onion
1 can black beans (optional)
1 tb.worchestshire sauce
1 1/2 cups cheddar cheese
Brown hamburger and onion. Add rice-a-roni and seasoning package, water and undrained tomatoes, beans and worchestshire sauce. simmer about 20 minutes or so until rice is tender. I added a little more water than called for because it seemed a little dry. When rice is tender, pat into casserole dish, (I used an 8x8) top with cheese and bake at 350 for 15 minutes until it is bubbly. This originally was just a casserole but I have been putting it in tortillas and even just with chips. Quick, easy and cheap!
