Thai Chicken Pizza
 This is from the cookbook, "Top Secret Restaurant Recipes" by Todd Wilbur.

Peanut Sauce
1/4 cup creamy peanut butter
2 Tbsp. teriyaki sauce or marinade
2 Tbsp. hoisin sauce
1 Tbsp. granulated sugar
1 Tbsp. brown sugar
2 Tbsp. water
2 tsp. sesame oil
1 tsp. soy sauce
1 clove garlic, minced
1/2 tsp. crushed red pepper flakes
1 tsp. minced onion (I used onion powder and it was fine)
1 tsp. minced gingerroot (I used ground ginger)

Mix the ingredients well in a microwave safe dish or a saucepan.  Bring to boil and cook for one minute (no longer, or it will get lumpy).  Or, microwave, covered for 1.5 minutes.  The sauce will be darker.  Stir it up and put 1/3 of it in a large plastic bag to marinate the chicken.  Keep the rest for the pizza sauce.

Toppings
1 boneless, skinless chicken breast (cut into small pieces and marinated in plastic bag for at least an hour).
1 package of grated mozzarella cheese (or 1.5 cups)
1 or 2 green onions, julienned in small strips.
1/2 cup bean sprouts (I leave these out.)
1/2 carrot, julienned or grated
2 tsp. minced cilantro
1 Tbsp. chopped peanuts (1 put whole ones on for crunch).

You can make the crust following this recipe or cheat like I do and get a Pillsbury crust in the tube!  LOL!

Crust
1/3 cup plus 1 Tbsp. warm water (105-115 degrees)
3/4 tsp. yeast
1 tsp. granulated sugar
1 cup bread flour
1/2 tsp. salt
1/2 Tbsp. olive oil

Start the dough the day before you make the pizza.  Dissolve the yeast and sugar in the warm water.  Let it sit for 5 minutes until the surface turns foamy.  (If it doesn't the yeast is dead, or you killed it with too hot water).  Sift together the flour and salt in a mixing bowl.  Make a depression in the flour and pour in the olive oil and yeast mixture.  Use a fork to stir, gradually drawing in the flour, until all the ingredients are combined.  Form the dough into a ball with your hands and knead on a lightly floured surface for 10 minutes.  Form the dough back into a ball and coat it lightly with oil, and place in a clean bowl covered with plastic wrap.  Keep in a warm place for 2 hours until doubled in size.  Punch it down and put it back in the bowl, covered, and in your fridge overnight.  Take it out 1 to 2 hours before you make the pizza so it can warm up to room temperature.

Assemble the pizza.  Roll out the dough.  Cover with remaining peanut sauce.  Stir fry the marinated chicken in a Tbsp. of olive oil, until it is cooked through.  Sprinkle the chicken, onions, carrot, bean sprouts, and cilantro over the pizza, top with mozzarella and peanuts.  Bake 10-12 minutes at 475 degrees.  (If you use a prepared crust, follow the baking instructions on the package.)

If you buy the premade crust, this is really easy and yummy!
