This casserole is soo good on a cold winter's day. Very carb-y! (mmmm, carbs!)Chicken Casserole1 12 ox bag egg noodles, cooked
1 can chicken broth
2 large chicken breasts, cooked and diced
1 box Stove Top or other brand stuffing mix, NOT COOKED
1 16oz bag frozen mixed vegetables, partially thawed. (You can run under hot water or cook briefly)
2 cups chicken gravy (I use jarred or sometimes a prepared batch of the powdered mix)In a 13x9 dish, combine egg noodles, chicken, vegetables and gravy. Mix well. Stir in ONE CUP of the dry stuffing mix. Scatter remaining stuffing mix over the top. Pour chicken broth over all. Bake at 350 for 35-45 mins or until bubbly. YUM!
Sounds good! You wouldn't even need to freeze this, because it sounds so quick to make! If you wanted to freeze it, you could mix it all together except for the noodles (I think they would get mushy), put it in a ziploc and freeze. Then, to cook it, thaw it in the microwave while you make the noodles, put it together and bake it the same way.
