Keto Donuts
With DH being diabetic and having a severe sweet tooth, he has given up ALOT of stuff. One is donuts and until now, never really found a recipe worth trying. This one only makes 4 donuts but they come out light and fluffy. It'll be easy to double it (or what DH told me...triple it 😂 ).

  • 2 tablespoons coconut flour
  • 6 tablespoons almond flour
  • 1 teaspoon xanthan gum
  • ½ teaspoon baking powder
  • 2 tablespoons monk fruit sweetener
  • 2 tablespoons coconut oil melted
  • 2 eggs
NSTRUCTIONSFor the Donut
  • Preheat oven to 350℉.
  • Mix all dry ingredients in a bowl with a whisk.
  • Add and rest of ingredients to the dry ingredients and whisk until it becomes a sticky, thick dough.
  • Use a piping bag or a ziplock bag to pipe the dough into a greased donut pan and bake for 20 minutes, then remove from oven to let cool.
  • While cooling, start the glaze.


The original link has the recipe to THEIR glaze and OMG...it didn't come out like it should AT ALL. So I went back to basics and did how my momma tought me: confectioners sugar and milk! But because DH is diabetic, we buy Swerve Confectioner's sugar

And since it measures JUST like regular confectioner's sugar, I used 1/2 cup of the Swerve with just a tablespoon of milk. Whisked and put one donut in, tossed it and put it on a plate. Did that to all 4.

Now the verdict. It truly makes 4. Actually, like 3 1/2. Maybe even 2.

They looked ugly, but the glaze made them look better. LOL

Taste wise?! Delicious! Light and fluffy.

DH and I each had one, and we went with the ugly ones.... 😂

The remaining 2 will be eaten later...

Not a complete epic fail...but not a complete win either....jury is still out. AT least they taste good!

Interesting...maybe we'll give it a try.  DH hasn't had anything sweet in over a year.  He said he doesn't want to have even a tiny taste of anything because then he will want more.  He has way more willpower than I do!
