I bought granola bar pans from Amazon because I've been wanting to take my homemade granola recipe and make bars out of it. Easy enough right? And it is! Just add more honey!
I ended up making two batches. First batch, I used my original recipe and just doubled the amount of honey. Oven was set to 300 degrees and I let them bake for 30 minutes:
Rule #1: BE PATIENT and let them cool COMPLETELY. I only waited 20 minutes and realized one started to crumble, so I stopped and let them continue cooling for another 40 minutes.
These came out chewy, which is what a granola bar should be.
Then I made another batch and this time, removed the coconut oil and left the honey (still doubling it). Once done, I let them cool for an hour. They easily popped out of the molds and they came out a bit crunchier, but still a bit chewy at the same time.
So either way, double the honey and leave/keep coconut oil. DH is excited because using this recipe, I can toss in choc. chips or nuts. Experiment with flavors. Overall a win!
