This one is super easy and yummy!
Ingredients:
3 fresh peaches, peeled and pitted
1 Roma tomato (or other...I actually chopped cherry tomatoes)
1/2 red onion
1 jalapeno (seed and core before processing if you don't like really spicy)
small bunch of cilantro (optional if you don't like the taste)
1 fresh lime
salt
Chop the peaches into about 1/2 inch chunks. Chop the other solid ingredients roughly and put in food processor or blender on lowest setting to combine. Mix in the peaches and squeeze the lime juice in and stir. Salt to taste.
That's it!
Serve with tortilla chips or you can get fancy and make cinnamon tortilla chips...spray some tortillas with cooking spray or lightly rub with olive oil. Sprinkle with cinnamon/sugar. Use a pizza cutter to cut into triangles and bake for 10 minutes at 350 degrees.

sounds good. so everything but the peaches and lime juice go through the food processor?

Yep. You could finely chop all the ingredients by hand, but that is the simple way. I just don't process the peaches because they get to small and pureed and like a bit of chunk to my salsa.

Forgot to add, if you don't like really spicy, seed and core the jalapeno before processing!

I made this last night with salmon, it came out very good. I left out the jalapeños, because I didn’t have one. I made the cinnamon tortillas too.

This sounds delicious! I am checking my peach tree every day to see if any are ready - I have to sneak in before the ants and squirells get to them. Already lost 4. Last year I waited one day too long and literaly overnight every one was gone (in most cases not fully gone just half eaten by the little buggers)
