This is one of my faves for the Super Bowl or other tailgate parties.
I use all the light versions of the ingredients for this and it still tastes great!
1 8 oz. brick cream cheese
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 clove minced garlic
3-4 chopped scallions
1-2 chopped jalapenos (seeds removed unless you like it fiery)
1/2 cup of bacon crumbles
1 cup crushed crackers (I use Keebler club crackers, but saltines or Ritz also work)
1/4 cup shredded parmesan
1/4 cup butter, melted
Mix the cream cheese, sour cream, mayonnaise, and cheeses together. Add in minced garlic, chopped scallions and jalapenos and bacon crumbles. Stir together the crackers, parmesan, and melted butter. Sprinkle evenly over the top of the dip. Bake in 350 degree oven for 25-30 minutes, until browned and bubbly. Serve hot with tortilla chips.
I will have to make this. My grown boys will love it. They'll be coming over soon to put down a new floor in bedroom and bath. I should plan to feed them!
