2 oz. Tomato Sauce
1 egg lightly beaten
1/3 of a small onion diced
1/3 of average size bell pepper diced
2 cloves garlic minced
2 tblsp grated parmesan cheese
1/4 tsp. black pepper
1/2 tsp. Mrs. Dash
1/2 tsp. Steak Seasoning (I used a local brand)
1 lb ground beef
Additional Parmesan Cheese
Sauce:
1/3 cup molassas
1 can tomato paste
1/4 scant cup reduced soy sauce
1/4 cup garlic red wine vinegar
optional: 1 tblsp Tabasco Green Sauce
Beat egg lightly; add tomato sauce and stir lightly. Add onion, bell pepper, garlic, parmesan cheese, black pepper, Mrs. Dash and Steak Seasoning. Mix. Add ground beef mix again; form into loaf. Place in bottom of Slow cooker. Sauce: Mix all ingredients and and pour slowly over meatloaf until covered. Cover and cook on Low 8 to 10 hours. The sauce is not designed to cook on high.
If your using a 93/7 ground beef I drizzled a tablespoon of olive oil over the top of the meat to help keep moisture in. Our beef is extremely lean that we raised.
One could double the recipe easily. I fixed it tonight for Larry and needless to say as he put it, 'I hurt myself'....which means fantastic and overate.
Like all recipes fixed for our taste. I don't cook with salt because I like my food better without it. Of course the exception is baking and the rare occasion we have potatoes or rice. Larry is on his diet right now so no bread crumbs as he has to limit the amounts of complex carbs. If I had a blender at the ranch I would have substituted a large tomato for the tomato sauce. I would have skinned and seeded the tomato then put in blender to puree.
