fish cakes
no these are not fish shaped desserts, it may sound a little funny but they are really quite tasty. I made it with Salmon the first time I tried the recipe and am making them with Tuna tonight. I found the recipe in the Kraft Foods magazine, they suggest using canned tuna but I choose to use frozen fish steaks instead. Here is a link to the Kraft recipe for ideas on variations.

Basic recipe - substitute ingredients as you prefer:
12 oz. of your choice of fish, fresh, frozen or canned. Cooked, drained, flaked.
1 pkg. Stove Top Stuffing Mix, your choice of flavor
1 cup shredded cheddar cheese
1/2 cup shredded carrot (I added celery also)
1/3 cup Mayo
3/4 cup water

Mix all ingredients. Cover and refrigerate for at least 10 min. or until chilled.Heat a large nonstick skillet sprayed with cooking spray on medium heat. For each cake, shape aprox. 1/3 cup mixture into patty. Add patties to skillet in batches. Cook 3 min. on each side or until golden brown on both sides, turning over carefully.
