Butterscotch Brownies2 cups brown sugar (apcked)
1/2 cup cooking oil
2 eggs
2 tsp vanilla extract
1 1/2 cups popped popcorn, finely ground and kernels discarded**
1/2 tsp salt
butter for greasing pan
1/2 cup chopped nuts, if desired** I used the hulless "puff'n corn" instead of popping popcorn and using it. Don't know if it is available everywhere but the brand here is Snyder's.
I use a little handheld chopper to grind my popcorn.Butter an 8 inch square baking pan. Preheat oven to 350 degrees F.
In a large bowl, stir together brown sugar, salt, oil, and eggs until smooth. Mix in vanilla and nuts. Add popcorn to batter stirring well. Spread evenly in buttered pan. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cut into squares while warm.
