Ingredients 1-1/2 Tablespoons dijon mustard 1-1/2 Tablespoons olive oil 1 garlic clove, minced 1/2 teaspoon tarragon 1 cup breadcrumbs 1 package of skinless, boneless chicken breast halves Chopped parsley for garnish Preheat oven to 450. Whisk together mustard, oil, garlic, and tarragon. Season chicken with salt and pepper. Spread mustard mixture over both sides of chicken. Dip into breadcrumbs, turning to coat. Place chicken in lightly sprayed baking dish. Bake about 15 minutes until cooked through. Garnish with parsley.I found this recipe at Whispering Pines B&B Website after googling "mustard and chicken". When I made it I didn't have dijon mustard so I used a yummy deli mustard I had on hand and I didn't use chicken halves I used something smaller like chicken cutlets. For the sides I used Rice-a-Roni Chicken & Garlic rice and corn.
