How to monitor Peak Network Traffic

Hey guy, I have searched but didn't find what I am looking for. I am monitoring several Linux based firewalls traffic. The issue is the 5 min or even 1 min average (260 Mbit/s) is not near what the peak traffic is (700Mbit/s). How can I graph the peak utilization of the interfaces? I would even be happy with a graph that showed the highest burst/peak of the last 5 min poll.

Cacti queries devices only at certain intervals. So you may reduce interval size (there are some topics on this in the GENERAL forum).
But be aware, that even then it simply creates the difference between measurements and divides them by the amount of time (in fact, rrdtool does this for cacti)
