I hope you have a minute time for me.
I`ve updated my 7.6.1 plesk installation to 8.1.1. But since that
time no graphs will apear. I`ve rechecked my permissions (with your userguides, and filemon) but I can`t find any ntfs permission errors

Access denied is often a sign of NTFS issues. make sure the IUSR_ and IIS_WPG users have read/execute rights to rrdool.exe and cmd.exe. Sysinternals Filemon would also reveal exactly/who is getting denied.

Post a log file from Filemon from when you ONLY try to view a graph (like from graph management).

Did you look through Filemon for all of those denied errors?
For example:
20:14:13 csrss.exe:396 OPEN C:\WINDOWS\system32\cmd.exe ACCESS DENIED NOC\IWPD_1(coloprovider)
I'm not exactly sure why csrss.exe is trying to launch cmd.exe, since typically I thought it would be w3wp.exe (but could be mistaken).
Did you filter out rrdtool.exe? I don't see it running and we should, since it actually generates the graph. Rrdtool.exe is invoked by cmd.exe to run.
You hosting multiple websites on this server?
