You can monitor anything that is SNMP based or anything that you can get into a RRD database.

Just install SNMP on your servers and use cacti's SNMP interface to pull all of its interfaces. This will give you a list of interfaces to grahp on. You will have to do a little more work to get it to monitor things like CPU, RAM, disk space... but those are all possible.
