Good afternoon:

I was wondering if anyone had any suggestions as to how to eliminate the gaps in the host data. I checked the database, the polling, etc. all seam just fine.

Even within the same host the gaps vary by element, (see attached). I thought it might be the NIC. If it was the NIC then why the different intervals for the same host?

I am at a lost. Any suggestions would be appreciated.

What does you poller tell you (see: cacti.log). Please verify, that the poller is running only once (check e.g. /etc/cron.d/cacti which may come along with rpm install).
