Here is the output from my cacti.log set to debug:

Previously, I was seeing an SNMP error, but, changing to debug seemed to yield different results.

Any ideas?

The updates are only updating "NaN"s! So no data in your graphs. Does the target respond to those OID requests you're asking for? See some cacti.log lines above those you've posted!

root@fx:/usr/local/apache2/htdocs/cacti/log# /usr/local/net-snmp/bin/snmpwalk -v 2c -c xxxxxxx x.x.x.x .1.3.6.1.2.1.2.2.1.16.1
IF-MIB::ifOutOctets.1 = Counter32: 3293562102

The data returns properly, but the graphs remain empty.

Look in the snmp cache for the gw1 device and see what OIDs cacti is polling for the errors_in and discards_out data.

There are other hosts/OIDs.

Ok, but I did not ask for other hosts. Please post the list of OIDs found in the poller cache for this very host
