We are re-patching our main switch to tidy it up a bit. This will mean that the data source for each graph will need to be updated to reflect the new interface that it is on. I've tried to do this for one graph and found that all the previous graph information gets lost and I am left with a new graph. Is there a way to update the data source and retain the history/data for a graph.

Are you just rename graph or you change (recreate) device setting under Data Sources (Devices)?
