If you want a easy to install (i.e. no hassel) then you could choose:-

http://cactiusers.org/wiki/CactiEZ v0.3 - which you burn from ISO to disk, put disk into cd-rom drive....press enter and hey presto - fully functioning Cacti server.

This will get you up and running for a cacti server, with NO knowlege required - but you will learn nothing about building a linux system.
