Okay after some more testing I discovered rebooting the pfsense box will break cacti interface monitoring. The device comes back up in cacti but the interface monitor will just show a flat blue line and the device uptime is incorrect, showing 400+ days online. Rebuilding the php poller or mysql data...

Tried all your suggestions but none of them work unfortunately. On top of that Cacti decided to just die and start reporting inaccurate results on the traffic monitor. Fresh install didn't help. Or I thought. Cacti broke down on its own and even after a reinstall traffic reporting is inaccurate as hell. On every 100MB it will add about 10MB. The problem isn't with what's being reported from the firewall.
Is there anyway to get Cacti to work as it should?

I did try installing CactiEZ and that is what's giving all those problems. For example I now have a non existing device on the tree and any new devices aren't added anymore. New installs have a 50/50 chance of trowing mysql errors. etc. For me its very unstable running inside a VM. When it works it ...

I figured this out. Setting the poller to anything other than the cron interval seems to cause this problem. With everything set to one minute the graph and data volume appears to be correct (minus the peaks not showing).
