After select interface you will see a page that shows inbound and outbound speed. Enter correct values. Or, go to data sources of this graph and write down correct speed. I think in this graph you leaved speed as 100.000.000 but it must be 120.000 Then you will see correct values.. Great template ....

If cacti could cope with daylight savings that would be nice, not a very important feature as it only happens twice a year. Restart & recache ?

I had to restart my server today it took almost 2 hrs (to recache everything (~180 hosts).

Any help or suggestions on how to prevent/change the method would be appreciated as my boss is just about ready to take my head off.

This is not a limitation within Cacti but with 32-bit SNMP v1 counters. Try using the 64-bit SNMP v2 counter and that should take care of this problem.
