It would be great if I could put a priority against each of the projects, so if I want to put my processing power against AIDS I can do that, but if there are not tasks available for AIDS research, then do CANCER, etc...

It would be nice, but in the ordinary way of things there is plenty of work for each project.
If you use BOINC, you can select the projects you want to participate in and also chose to get work from other projects if no work is available for your selected projects. It's not quite what you ask for, but it gives a similar result - and makes more sense given that most projects will always have work available. |
