We don't only crunch, we also cook. Here is a recipe for bacon and lentil soup from our forum 'Cooking & recipes' section. This is a family recipe, and you are free to use it as you will. Enjoy!
----------------------------------------INGREDIENTS 250g lean bacon rashers. 125g lentils. 1 x medium onion. 1 x medium potato. 1 pint chicken stock. 1 x heaped teaspoon Herbs Provence. Black pepper. Corn or vegetable oil. METHOD 1. Trim rind and excess fat from bacon, cut bacon into 1/2" squares. 2. Peel and finely chop the onion. 3. Peel and cut potato into 1/2" squares. 4. Heat a little oil in a large pan until smoking, cook onion until browned. Stir to prevent burning. 5. Put bacon into pan and cook on high for 2 minutes. Stir to prevent sticking. 6. Put chicken stock and Herbs Provence into pan, bring to the boil, then reduce heat to simmer. 8. Add black pepper to taste. 9. Boil 2 pint of water and add to pan. 10. Add lentils to the pan. 11. Simmer gently until lentils are soft and potato cubes begin to break down - normally 20 to 25 minutes. Stir frequently to prevent sticking. NB: Potato and lentils will add natural thickening to the soup, causing it to take on a creamy appearance. Bacon will provide sufficient salt. No extra of either is required. If soup is too thick for personal taste, add boiling water a little at a time. Serves 6 - 8. SERVE Serve with warm, crusty white bread or bread rolls. Any soup left may be frozen. |
