What difference does it make whether I make 1GB or 10 available on my computer?

It makes a difference to your "storage" section of your overall rating.
Other than that nothing really, I don't think.

These ratings were devised many moons ago and badly need updating.
But that won't happen til if/when a new client is written.....preferably with Linux/OSX support.

The ram rating is already showing it's limitations as it only addresses 1.25 gb.
The faster cpu's that are coming along are gonna be limited to a 300 score too...which may annoy some of the 3 ghz Venice crew biggrin
